Je dois donc go\u00fbter aux deux minutes environ pour d\u00e9tecter quand survient le bon alcool, l\u2019\u00e9thanol, et commencer \u00e0 le recueillir\u00bb, explique Mme Rochette.<\/p>\n<p>Dans les distilleries industrielles, ce processus est confi\u00e9 \u00e0 une machine, ce qui laisse passer une certaine quantit\u00e9 de mauvais alcool. C\u2019est pour s\u2019assurer d\u2019une qualit\u00e9 de produit irr\u00e9prochable que les distilleries artisanales recommencent \u00e0 confier ces t\u00e2ches aux humains.<\/p>\n<p>\u00abRendu \u00e0 la fin de la distillation, c\u2019est encore plus d\u00e9licat et je dois parfois go\u00fbter aux 30 secondes, car un litre d\u2019alcool de queue suffit \u00e0 ruiner une production de vodka\u00bb, dit Isabelle Rochette.<\/p>\n<p>Puisqu\u2019elle ne go\u00fbte qu\u2019avec le bout de son doigt, la distillatrice ne craint ni l\u2019ivresse ni les maladies de foie.<\/p>\n<p>\u00abC\u2019est un m\u00e9tier multisensoriel. J\u2019observe aussi la texture et la sensation de chaleur de l\u2019alcool\u00bb, dit-elle. Une appr\u00e9ciation que l\u2019humain fait mieux que la machine, selon elle.<\/p>\n<p>Isabelle Rochette doit aussi go\u00fbter le gin pendant sa distillation afin de s\u2019assurer de retirer les aromates utilis\u00e9s pour le parfumer, baies de geni\u00e8vre et autres \u00e9pices, avant qu\u2019ils ne lib\u00e8rent leur amertume.<\/p>\n<p>\u00abC\u2019est en distillant qu\u2019on devient distillateur\u00bb, dit Mme Rochette, qui a appris les bases de son m\u00e9tier de go\u00fbteuse en \u00e9tudiant la sommellerie et sous la tutelle de Paul Cirka, ma\u00eetre-distillateur.<\/p>\n<p>Avec l\u2019industrie qui se met en place, les occasions de formation se multiplient pour ceux qui veulent apprendre le m\u00e9tier.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Les distilleries artisanales se multiplient au Qu\u00e9bec, ce qui fait rena\u00eetre le m\u00e9tier de go\u00fbteur d\u2019alcool, qui n\u2019existe plus dans les distilleries industrielles qui font confiance aux machines.
