charcuterie boards, and I&#8217;ve come up with a formula that I&#8217;m going to apply to all the ones I make from now on:<\/p>\n<p><u>Cheeses (one of each category)<\/u>:<\/p>\n<ul>\n<li>Soft: Camembert, Brie de Meaux, Vacherin Mont-d&#8217;Or<\/li>\n<li>Semi-Soft: Havarti, Munster<\/li>\n<li>Firm: Emmental, Gruyere, Jarlsberg, Edam<\/li>\n<li>Blue: Gorgonzola, Stilton, Roquefort<\/li>\n<li>Stronger: Aged Cheddar, smoked Gouda, Epoisse<\/li>\n<\/ul>\n<p><u>Meats<\/u>:<\/p>\n<ul>\n<li>Sopressata, chorizo or other dried salami-style dry-cured sausage<\/li>\n<li>Jam\u00f3n serrano, lomo or prosciutto<\/li>\n<li>Uncured ham, guanciale or porchetta<\/li>\n<li>Roast beef or bresaola<\/li>\n<li>Pat\u00e9, terrine or rillettes<\/li>\n<\/ul>\n<p><u>Fruit &amp; Vegetables (preferably in season)<\/u>:<\/p>\n<ul>\n<li>Fresh berries (strawberries,raspberries,blackberries)<\/li>\n<li>Dried fruit (cranberries, cherries, raisins)<\/li>\n<li>Mandarin oranges<\/li>\n<li>Grapes<\/li>\n<li>Sliced apple or pear<\/li>\n<li>Tomatoes<\/li>\n<li>Herb-sauteed mushrooms<\/li>\n<\/ul>\n<p><u>Pickles &amp; Preserves<\/u>:<\/p>\n<ul>\n<li>Pickled gerkhins<\/li>\n<li>Pickled pepperoncini<\/li>\n<li>Grilled artichoke hearts<\/li>\n<li>Marinated olices (Manzanilla olives with oil, rosemary, red pepper flakes, salt &amp; pepper)<\/li>\n<li>Marinated feta (cubed feta, oilve oil, italian herbs, chili flakes, cracked pepper)<\/li>\n<li>Strawberry, basil &amp; black pepper Cabernet preserves (recipe below)<\/li>\n<\/ul>\n<p><u>Bread &amp; crackers<\/u>:<\/p>\n<ul>\n<li>Grilled baguette toast<\/li>\n<li>Pita or other flatbread<\/li>\n<li>Crostini, crackerbreads, breadsticks<\/li>\n<li>Assorted crackers<\/li>\n<\/ul>\n<p><u>Other<\/u>:<\/p>\n<ul>\n<li>Cabernet balsamic reduction (recipe below)<\/li>\n<li>Fresh butter<\/li>\n<li>Honey<\/li>\n<\/ul>\n<p>EDIT: great tip that I found. A lot of deli\/cheese counters have odds-ends bins, where small bits at the end of a large joint of meat or block of cheese, or things close to the sell-by date are put often at very reduced price. It can be a way to gets lots of variety for a deal!<\/p>\n<p><b>Cabernet Balsamic Reduction<\/b><\/p>\n<p>1 cup balsamic vinegar<br \/>\n1 cup Cabernet Sauvignon<br \/>\n2 tbsp honey, optional<\/p>\n<p>Combine ingredients in a small saucepan over medium heat. Bring to a boil and reduce to a simmer. Cook until balsamic thickens and the mixture reduces by about half, about 10-12 minutes. Stirring occasionally. Be sure to keep an eye on it so it doesn\u2019t burn or boil over. The balsamic will thicken as it cools; store in an airtight container in the refrigerator until ready to use.<\/p>\n<p><b>Strawberry, basil &amp; black pepper Cabernet Preserves<\/b><\/p>\n<p>4 cups strawberries, halved*<br \/>\n1.25  cups brown sugar<br \/>\n1\/3 cup grated apple<br \/>\n2 tbsp minced basil<br \/>\n1\/4 cup lemon juice<br \/>\n1 cup Cabernet Sauvignon<br \/>\n3\/4 tsp freshly cracked black pepper**<\/p>\n<p>*You can quarter, dice, or even puree the strawberries for a smoother texture.<br \/>\n**This lends a nice peppery kick to the preserves. You definitely want to use freshly cracked black pepper! If you\u2019re not a fan of black pepper use 1\/4 tsp or omit entirely.<\/p>\n<p>Combine strawberries and sugar in a bowl and allow to sit a few hours or overnight. This will macerate the berries and help release their juices. Combine strawberry sugar mixture along with the remaining ingredients in a medium heavy-bottomed saucepan. Simmer over medium low heat, stirring frequently, for about 35-40 minutes, until thickened to spoon test.
