{"id":4991,"date":"2012-06-10T19:57:45","date_gmt":"2012-06-10T19:57:45","guid":{"rendered":"http:\/\/www.flubu.com\/blog\/?p=4991"},"modified":"2012-06-10T19:57:45","modified_gmt":"2012-06-10T19:57:45","slug":"recipe-paella","status":"publish","type":"post","link":"https:\/\/www.flubu.com\/blog\/2012\/06\/10\/recipe-paella\/","title":{"rendered":"[Recipe] Paella"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>    3 tbsp olive oil<br \/>\n    6 chicken thighs, boned, skinned, cut in half<br \/>\n    150g Mathesons smoked sausage<br \/>\n    2 onions, chopped<br \/>\n    1 large red pepper, quartered, deseeded and sliced<br \/>\n    1 large green pepper, quartered, deseeded and sliced<br \/>\n    150g peas<br \/>\n    1 heaped tsp smoked paprika<br \/>\n    2 pinches saffron (or 1\/2 tsp tumeric)<br \/>\n    1\/2 tsp ancho chili powder<br \/>\n    1\/2 tsp rosemary<br \/>\n    1 bay leaf<br \/>\n    250g paella rice<br \/>\n    1L pints hot chicken or vegetable stock<br \/>\n    24 raw king prawns<br \/>\n    salt and freshly ground black pepper<br \/>\n    handful chopped fresh flatleaf parsley, to garnish<br \/>\n    lemon wedges, to serve<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>    Heat two tablespoons of the oil in a 36cm\/14in paella pan or a very large frying pan set over a medium heat. Season the chicken thighs with rosemary, chili powder, salt and freshly ground black pepper and fry for five minutes, turning regularly until lightly coloured. Add the sausage and cook for a further minute. Add the remaining oil, red pepper and green pepper to the onions and cook for two minutes, or until beginning to soften. Return the chicken and sausage to the pan, along with any juices that have collected underneath the meat. Stir well, then pour over the stock. The prawns should be completely pink once cooked. It is important not to stir the paella after the prawns are added as you want the rice to become lightly browned and a bit sticky on the bottom as this adds lots of flavour.<\/p>\n<p><img
