{"id":7430,"date":"2013-07-26T13:59:18","date_gmt":"2013-07-26T13:59:18","guid":{"rendered":"http:\/\/www.flubu.com\/blog\/?p=7430"},"modified":"2013-07-26T13:59:18","modified_gmt":"2013-07-26T13:59:18","slug":"recipe-pressed-picnic-sandwich","status":"publish","type":"post","link":"https:\/\/www.flubu.com\/blog\/2013\/07\/26\/recipe-pressed-picnic-sandwich\/","title":{"rendered":"[recipe] pressed picnic sandwich"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.flubu.com\/blog\/wp-content\/uploads\/2013\/07\/pressed-picnic-sandwich.jpg\" alt=\"pressed-picnic-sandwich\" width=\"440\" height=\"400\" style=\"float:right;margin:10px\" \/><\/p>\n<p>Ingredients<\/p>\n<p>long ciabatta loaf, sliced in half lengthways<br \/>\n3 tbsp olive oil<br \/>\n1 tbsp balsamic vinegar<br \/>\n1 tsp Dijon mustard<br \/>\n2 big handfuls of rocket<br \/>\n8 roasted artichoke hearts from a jar, quartered<br \/>\n250g roasted red peppers from a jar<br \/>\n8 slices prosciutto<br \/>\nhandful of basil<br \/>\n125g ball mozzarella, cut into slices<br \/>\n1\/2 red onion, very finely sliced<\/p>\n<p>Method<\/p>\n<p>Slice the ciabatta loaf in half lengthways and heat the oven to 200C\/180C fan\/gas 6.<\/p>\n<p>Put the ciabatta loaf halves, crust-side down, on a large baking tray and drizzle with a little olive oil. Pop them in the oven for a few mins until just golden and lightly toasted.<\/p>\n<p>Put the olive oil, balsamic vinegar and mustard in a bowl, then whisk them together with a fork.<\/p>\n<p>Remove the toasted ciabatta halves from the tray and drizzle the bottom slice with about half of the dressing.<\/p>\n<p>Arrange the rest of the ingredients in layers. Start with a large handful of rocket, then a few artichoke hearts. Next add the slices of pepper, the prosciutto, basil, mozzarella and, finally, the red onion.<\/p>\n<p>Drizzle over the rest of the dressing and pop the other slice of ciabatta on top.<\/p>\n<p>Press down on the sandwich to squash all the layers together.<\/p>\n<p>Wrap the sandwich in baking parchment and tie it together with a couple of pieces of string.<\/p>\n<p>Place a heavy baking tray on top of your sandwich and top it with weights or loaf tins filled with baking beans. <\/p>\n<p>Pop it all in the fridge overnight or until you are ready to eat it.
