So far this weekend, I’ve made scotch eggs, fried chicken, sweet chili sauce and bacon-stuffed buttermilk rolls.
Been busy! And I realized that I haven’t made those rolls in years! I had to go off-piste with the recipe because I used up all the buttermilk for the fried chicken, but all the baking I’ve been doing recently saved the day and they came out great in the end.
1/3 cup rice vinegar
1/3 cup water
1/3 cup cane sugar
1 tbsp sambal oelek (more or less according to taste)
1 tsp finely minced ginger
1 tsb soy sauce
2 tsp cornstarch dissolved in 1 tbsp water
Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week.
So I went to dump our recycling. I do it periodically. I *think* the last time I did it was about a month ago, probably before all the covid-19 goodness.
Since then, my recycling bin has consumed 16 bottles of wine, a bottle of gin, a bottle of vodka and a giant tub of instant coffee.
Should I call someone for it?
I went for a walk with Katy earlier today when I realized that I hadn’t left the flat since Saturday. The tulips were in full bloom.
I was looking for a particular entry in my work calendar today when I came across a meeting item simply called ‘onions’. There is no other information associated with it. I must have created it. It’s in my private, personal, work calendar. For the life of me, I have no idea whatsoever what it refers to.
As part of our lockdown entertainment, Katy and I have been binge watching our old movies. This weekend, they included gems like Beetlejuice, Running Man and Robocop. We have Top Gun, the Karate Kid, Beverly Hills Cop and Back to the Future in the lineup this week.
There are times when we actually do have fun together. They are few and far between. The rest of the time is pretty much a full-on screaming shit show.
Whip together 1 tbsp instant coffee, 1 tbsp sugar and 1 tbsp boiling water until frothy. Put ice in a glass, top with milk and a shot of Kahlúa, then spoon the frothy caffeine-y sugary mouse on top.
The Queen made a rare televised speech, beyond the usual Christmas speech, on April 5th. She delivered a message of hope amid the current crisis, thanking the front-line medical workers. And while the historic address was enough to make headlines, something else glued the internet memesters to the screens.
It was the Queen’s dress. That bright shade of turquoise green… did someone say “green screen”? As you can imagine, the rest is history.
