[recipe] Earl Grey French 75

Earl Grey-infused gin

1/2 cup gin (I used Tanqueray Rangpur)
2 teabags Earl Grey tea (or 2 tsp loose leaf tea)

Simple syrup

3 tablespoons sugar
3 tablespoons water

Per cocktail

1 ounce Earl Grey-infused gin
3/4 ounce fresh lemon juice
1/2 ounce honey simple syrup
Dry Champagne or Prosecco, for topping off the drink (a few ounces per drink)
Twist of lemon, as garnish

To make the infused gin: Measure out the gin and submerge tea bags in the liquid. Cover the gin and let it seep for 1 hour. Then remove the tea bags, squeezing absorbed gin into the mixture before discarding the bags.

To make the simple syrup: Combine the sugar and water in a small saucepan. Warm over medium heat, whisking occasionally, just until the sugar has melted into the water. Remove from heat.

To make a cocktail (you can make multiple drinks at once): Fill a cocktail shaker with ice. Pour in Earl Grey-infused gin, lemon juice and simple syrup in the proportions listed above. Securely fasten the cap on the shaker and shake until well chilled, about 20 seconds. Strain the liquid into Champagne glasses and top with Champagne. Garnish with a twist of lemon.

[recipe] (Frozen) Margarita

2 oz White tequila
1 oz Fresh lime juice
3/4 oz Orange liqueur
1/2 oz Agave syrup
Garnish: Salt rim
Garnish: Lime wheel

To make a standard Margarita:

Add all the ingredients into a shaker, and top with ice. Shake until chilled.

Strain into the prepared rocks glass over fresh ice.

Garnish with a lime wheel and salt.

To make a frozen Margarita:

Salt the rim of a chilled Margarita glass and put aside.

Add all the ingredients into a blender, and top with 1 cup of ice. Blend until the mixture is smooth and frothy.

Pour the contents into the salted Margarita glass.

Garnish with a lime wheel.

Black Russian

2 oz Vodka
1 oz Kahlúa

Add all the ingredients into a mixing glass with ice and stir.

Strain into an Old Fashioned glass over fresh ice.

White Russian

2 oz Vodka
1 oz Kahlúa
1 splash Heavy cream

Add the vodka and Kahlúa to an Old Fashioned glass with ice.

Top with the heavy cream and stir.

Add all ingredients into a wine glass with ice and stir.

Garnish with an orange wheel.

3/4 oz Fresh lemon juice
3/4 oz Simple syrup
1 1/2 oz Gin
Club soda, to top
Garnish: Lemon wheel
Garnish: Mint

Add the lemon juice, simple syrup and gin into a shaker with ice and shake well.

Strain into a Collins glass over fresh ice.

Top with club soda.

Garnish with a lemon wheel and a sprig of mint.

Serve with a straw.

[recipe] Espresso Martini

2 oz Vodka
1/2 oz Simple syrup
1/2 oz Coffee liqueur
1 oz Freshly brewed espresso
Garnish: Coffee beans

Add all of the ingredients into a shaker with ice and shake.

Fine-strain into a chilled cocktail glass.

Garnish with 3 coffee beans.

Notes:
You can make a simple syrup by dissolving 1 cup of sugar in 1 cup of boiling water. It’ll keep for a week or so in the fridge.

2 pinches Celery salt
2 pinches Freshly ground black pepper
1 Lime wedge
2 oz Gin
4 oz Tomato juice
1/2 oz Freshly squeezed lemon juice
6 dashes Tabasco
3 dashes Soy sauce
1/2 tsp horseradish (or wasabi)
Garnish: Celery stalk
Garnish: Lim wedgePour the salt and pepper onto a small plate.Rub the juicy side of a lime wedge along the lip of a pint glass, rim the glass with the salt and pepper, and fill the glass with ice.Add the remaining ingredients into a shaker with ice, and shake until chilled.Strain into the prepared glass, and garnish with a celery stalk and lime wedge.

I want to become a professional cocktail tester.

The bartenders at Burleighs gave us one of their WIP cocktails, based on smokey whisky, elderflower and hibiscus. Katy and I both agree it needed something. We finally agreed on sweetness, and the bartender sent us a Mk2. It’s amazeballs. And probably a bit dangerous.
